Soft Oatmeal Bread

There is nothing in this world like fresh bread out of the oven. Add a little butter, a little honey, and you're in heaven. Homemade bread is the ultimate in comfort food, and therefore, perfect for fall!

I like to cheat and make the dough in the bread machine, and then take it out and bake it in the oven. My sister and I originally found this recipe in a cooking magazine. Since then we have both made it many times for our families.

Enjoy this family favorite.


Soft Oatmeal Bread
(bread machine recipe) (3 points per slice)

(Check your bread machine's directions for what order to add your ingredients)

First add:

1 ½ cups water (needs to be between 70° and 80°; the temperature is important -- it needs to be warm, but not hot)

¼ cup sugar

¼ cup vegetable oil

2 teaspoons salt

1 teaspoon lemon juice

 Then add remaining dry ingredients:

3 cups bread flour

1 ½ cups of quick cooking oats

2 ½ teaspoons yeast


Choose light crust, makes a 2 lb loaf. The dough will be quite sticky, but this bread is especially moist and tender. A favorite recipe with many people.

To make in oven: Select dough cycle on bread maker. When done, take out, knead and shape, and place into greased loaf pan. Let rise until double in size. Bake in 375º oven for 45-50 min. Shield top of loaf with foil if crust cooking too quickly.

Bread machine newbie, I tried this recipee and failed. The loaf weighed a ton! What did I do wrong?

Linda -- this recipe produces a moist, dense, heavy bread. If that is your only worry, then you did it right! :)

Other issues?

One thing might be that the water needs to be lukewarm in this recipe. It will make a difference if it's not.

Many times in a bread machine, you must add the ingredients exactly in the order you see in the recipe. (Usually all the wet ingredients, then all the dry ones. I, myself, make a little well in the dry ingredients for the yeast and then put it in, for this recipe.)

Hmmm. What else? Check your yeast's expiration date....?

If you're still having trouble, try putting your bread machine on the dough cycle -- then pull it out, let it rise, and cook it in the oven. That's my favorite way to serve Soft Oatmeal Bread!
